Abstract
The growth of Saccharomyces cerevisiae on sweet orange (Citrus sinesis) residue as a means of enriching its protein content was investigated. The optimum growth conditions with respect to pH and temperature were determined in a batch type fermentation. A biomass product containing 57% (w/w) crude protein was produced in a 4% (w/w) citrus-waste medium at pH 5·5 and at a temperature of 36°C during a 12-h incubation period.
